I never did use any of the dried potato products in Germany, so unfortunately I can't give you any advice. I'm sure they're very similar to the same type of products in the U.S. in terms of how you use them, but I wouldn't be surprised if the Germans have even more varieties and uses for them given their love of potatoes. Sorry I can't be of more help. Rice is definitely trick...Thanks for your comment!

Rice is definitely tricky business at high altitude but with some trial and error you'll find that perfect ratio for the type of rice you prefer. More liquid and time are the keys. I've also found, and should add this to the post, that using a larger pot helps the rice from getting mushy. Sounds counterintuitive, but it's really just a bit of give and take on both sides to get the perfect texture.

For bread, you're in luck that yeast breads don't require practically any changes at high altitude. Quick breads (using baking soda or powder) are a bit different, but my "Baking at Altitude" post should help to get you started on making some adjustments to your favorite recipes.

Bienvenida a México y Buen Provecho!
-AlainaChef Alainahttps://www.blogger.com/profile/11509109199445225520noreply@blogger.comtag:blogger.com,1999:blog-1054261278280692003.post-36366167481108658202016-03-09T04:24:35.441+02:002016-03-09T04:24:35.441+02:00Oh, my god! I'm in Mexico City for 6-month "dry run," and came across your blog while trying to find something about how to cook rice at altitude as so far I haven't been very successful. When I first moved to Mexico I got a call from my fella asking if he could borrow my SUV because he had "30 alcatraces" he wanted to bring home and they didn't fit in his car. Now, alcatraz = albatross, and my guy is a bit of a bleeding heart, especially when it comes to animals. We live on the sea, so I imagined he was going to bring home two and a half dozen large, injured seabirds for rehabilitation. You cannot imagine my relief when I discovered alcatraz also meant calla lilies.
